I love this recipe b/c you can make these a few days before and freeze or refrigerate them- less prep on the day of!

Make Ahead Potatoes
- 3 1/2 lbs potatoes
- 3/4 cup sour cream
- 1/2 cup chopped green onions
- 1/2 tsp salt and pepper
- 1/2 ib herbed cream cheese
- 2 eggs
- 2 tbsp. butter, melted
Peel and quarter potatoes. Cook under tender, drain and mash well.
In a large bowl, whisk cream cheese, sour cream, eggs, onion, butter, salt and pepper until smooth. Fold in potatoes, combining thoroughly.
Spoon into greased 11x7"(2L) baking dish. (Can be prepared to this point, covered and refrigerated for 2 days or frozen for 1 week). Let stand at room temperature for 30 minutes.
Bake at 350F for 45-50 minutes or until heated through. (may need longer if cooking from frozen). Makes 10-12 servings.
