We're all about meatloaf around here.  My husband's grammie's secret recepie is to die for and I'm not a big red meat fan. Kids love it too!

Here's what I remember....

  • 1lb ground beef (I like medium ground in this for flavour and a bit more fat!)
  • 1lb sausage meat (either de-case flavoured sausages or buy pork and flavour it. We have found sausage meat a few times at Fortino's but it's not always available. 
  • 1pkg of Onion Soup Mix
  • 2 eggs
  • 1/2 of bread crumbs or more depending on taste
  • 1 tsp salt
  • Worchester  sauce
  • 1 pkg of bacon

Mix beef, sausage meat, eggs, soup mix, salt and bread crumbs in a large bowl, add desired amount of Worchester sauce. 
Portion into a loaf pan or those tin pans. 
Then cover the entire top with bacon...yum...now I want meatloaf. 
Cook at 375 for 45 mins-1hour. 

I have to admit we have a digital meat thermometer as I never do know if meat is done or not. 
We tend to serve this with mashed potatoes or roasted potatoes and veggies of your choice.
