If it’s Easter there needs to be eggs on the brunch menu! Sometimes eggs are a bit fussy to be making the morning of, along with Hot Cross Buns, Ham, Fruit and all those chocolate eggs. A quiche stand-in can be your best friend on the buffet and is a great dish to prep the night before and reheat that morning.
